Blueberry Banana Bread (video)

So, I Â have been a little unlucky in the kitchen lately. Last week I made a no-bake chocolate cream pie that tasted great, but looked unaesthetically pleasing. Hence, no post last week. This week, I was editing my video while my blueberry streusel banana bread was baking, and I suddenly realized “oh crap! I forgot to put in the eggs.” I ran downstairs and stared at the blueberry banana bread through my oven glass window. It was rising as normal and smelled great, but what the heck was it going to taste like? I was so upset at myself, thinking what a dumbass move. What a waste of ingredients and time. Though, there was nothing I could do but wait till it was done and try it.
After the bread had cooled, I went about my business and took a couple of photographs. Then came the moment of truth, I nervously cut into the bread and tried it, and guess what? It was friggin amazing! I couldn’t believe how moist it was, and it tasted like everything I hoped it would and more. Who would have thought the eggs weren’t even necessary in this recipe. The kids devoured it and my husband has already asked me to make more of this eggless banana bread.
The texture is soft and moist with a crunchy crumbly streusel topping. The taste is of ripe naturally sweet bananas with juicy fragrant blueberries. There is a little bit of cinnamon added for depth and flavor. There is also a subtle lavender note from the fresh blueberries.
So, to sum it all up, my accidental eggless blueberry banana bread is a moist, fruity, crunchy, sweet perfection!

Description
This is a moist flavorful banana bread that is studded with delicious blueberries, and topped with a crunchy sweet cinnamon streusel.
Ingredients
Streusel
- 1/4 cup (30g) all-purpose flour
- 1/4 cup (50g) sugar
- 1/2 tsp cinnamon
- 2 tbsp (30ml) melted unsalted butter
Bread
- 1/2 cup (114g) melted unsalted butter
- 1 cup (240g) mashed bananas
- 1/4 cup (60ml) milk
- 1 & 3/4 (220g) cups all-purpose flour
- 1 cup (200g) sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 cup (150g) blueberries
Instructions
- Preheat oven to 325F. Butter and line a 9×5″ baking pan with parchment paper.
- In a small bowl, toss together the first 3 ingredients for the streusel. Add in melted butter and stir until mixture looks like wet sand.
- In a medium bowl, whisk together the melted butter, bananas and milk. Set aside.
- In a large bowl, whisk together the flour, sugar, baking soda, salt and cinnamon together. Toss in the blueberries to coat.
- Add the wet ingredient to the dry and mix until just combined.
- Pour into prepared baking pan. Sprinkle with streusel on top and press down lightly.
- Bake for about 1 hour or until a toothpick inserted into the center comes out clean.
I absolutely love this bread! My daughter is allergic to eggs, and this is one of a few go to recipes that comes out great each time! Thank you and I would love other baked goods without egg!

What a great recipe! Will be making this whenever I have ripe bananas. The cake is very moist and the streusel is a delicious touch. Unlike most banana bread recipes I’ve seen, I’m glad we did not need buttermilk as I did not have any. That’s what I like about your recipes, simple ingredients we have at home. My mother shared your site with me during this quarantine and I’m glad she did, I will continue to refer to it!

Made this today during COVID-19 where we must use what we have in our kitchens!! This recipe was perfect as I didn’t have eggs. I ran out of cane sugar in the middle of making the batter, so I had to improvise w brown sugar. This bread is so light and fluffy yet moist! That topping is so good!! I made this last night to bring to my coworkers this morning. The only thing I changed was I added extra banana because I didn’t want to waste it and I used salted butter because it is what I had on hand. I would bake at 350F for maybe 20-25 minutes or until a toothpick inserted into the center comes out clean. Check at 15 minutes to see how the muffins are coming along. I hope that helps and enjoy the muffins!
I had a couple of bananas that needed to be used, but I didn’t have any eggs. I searched for a recipe that I could make and this one came up. I knew that I didn’t have any blueberries, but that didn’t stop me lol I did change up a few things. I used an apple shredded in lieu of the blueberries. I didn’t have much milk, so used 1/4 cup of sour cream. It seemed a little thick to me, so I added 4 tbsp of milk. I personally like coconut in my banana bread, so added about a handful to the batter. Also added 1 tsp of vanilla extract.
Can I say WOW? This was probably the best banana bread I have ever made (and I have made quite a few loaves in my life). Thank you for sharing such an adaptable recipe!

Baking powder to make the bread rise?

Baking soda works well with dense batters like banana breads. It’s a stronger leavening agent. If you were to substitute the baking soda for baking powder, you would need to use 4 times as much. I hope that helps and let me know if you have any further questions:)
