Ingredients you’ll need:

  • Apples – The star of the recipe. Choose sweet and firm apples that hold their shape when baked, such as Honeycrisp, Gala, Pink Lady, or Ambrosia.
  • Milk – Creates a thin batter that coats the apple slices evenly.
  • Sugar – Adds sweetness while helping the cake develop a delicate golden color.
  • Eggs – Provide structure and bind the batter together.
  • Butter – Adds richness and enhances the cake’s tender texture.
  • Vanilla Extract – Adds warmth and depth of flavor.
  • All-Purpose Flour – Gives the cake enough structure while keeping it soft and delicate.
  • Collagen Peptides – Boost the protein content without altering the taste.
  • Baking Powder – Helps keep the custard from being too dense.

Step #5) Spoon the batter into a 9×5″ loaf pan lined with parchment paper, making sure to layer the apple slices evenly.

Step #6) Top with almond slices if desired. Bake at 350F for 50-60 minutes.

🌟 Expert tips:

  • Use a mandoline for ultra-thin, even apple slices.
  • Choose firm apples that won’t become mushy during baking.
  • Don’t skip pressing the mixture into the pan to eliminate gaps between the apple layers.
  • Allow the cake to cool completely after baking for the cleanest slices.
  • Chill overnight for an even more custard-like texture.

Storing & freezing instructions:

Storing – Store the cake tightly covered in the refrigerator for up to 4 days. The flavor actually improves after a day, as the apples continue to soften and meld with the custardy cake.

Freezing – Wrap the cake tightly in plastic wrap and place it in a freezer-safe container. Freeze for up to 2 months and thaw overnight in the refrigerator before serving.

Recipe FAQs:

Can I use another protein powder?

Collagen peptides work best because they dissolve easily and don’t affect the texture. Whey protein may produce a denser cake.

Why is it called an “invisible” apple cake?

Because the thin apple slices seem to disappear during baking, leaving a custard-like delicacy.

Can I make this gluten-free?

Yes. Substitute a good-quality 1:1 gluten-free flour blend for the all-purpose flour.

Does the cake need to be refrigerated?

Yes. Because it contains a large amount of fruit and moisture, refrigerate the leftover cake after it has cooled.
