Chewy Chocolate Chip Cookie Bars (video)
These easy chocolate chip cookie bars are super chewy, loaded with chocolate chips, and only takes 10 minutes to prepare. Just mix everything by hand and bake!

If you ever need a great quick and easy dessert to feed a crowd – this is it! It never fails and is guaranteed to please every time. Chocolate chip cookie bars are just a simpler, thicker and chewier version of a chocolate chip cookie. It’s simpler in the fact that you don’t have to drop the batter for individual cookies onto a baking sheet. You just bake the whole thing in one pan and cut into squares afterward.

Why this recipe is so great:
- It’s all in the ingredients – I used melted butter in this recipe to make the cookie bars chewier. I used all brown sugar for a softer texture, giving it a golden-brown color and deep caramel flavor. The eggs give it rise and richness. The vanilla is for flavor. The flour is for substance and structure. The baking soda prevents the final product from being too dense, and the salt just enhances all the flavors.
- Packed with chocolate chips – This is the allure of these cookies bars. There are loads of chocolate in every bite.
- Quick and easy to make – The reviews below say it all. This recipe is so easy, you can whip up a batch in minutes and clean up is a breeze.
- Here is what some of my readers have to say:
“I made these bars tonight, and Oh my gosh!!! The best chocolate chip bars ever! Even better…so easy and fast to make, my family loved them.” – Rebecca
“Made the bar cookies yesterday. My clan wiped out 3/4 of the pan in one sitting! Not only do they taste great but they are so easy to make. Will definitely be keeping this recipe handy.” – Sylvia
“This was soooooooooo easy to make meaning it was so easy to clean the kitchen afterwards. Absolutely delicious, no need to spend hours making a fancy cake that wouldn’t taste half as yummy as this. AND THE TEXTURE!!! Wowwwwww! Easy to bite ( no crumbs from dryness and not falling apart from wetness) and the taste of heaven in your mouth. Chewy dreamy! Lady, you are a baking goddess!’ – Arevik

Can I use white sugar Insteadof brown sugar can’t get to the store bad weather
Yes, you can. The flavor and texture will be slightly different, or if you have molasses, you can mix a bit of molasses with your white sugar and make your own brown sugar.
Can I substitute ground oats for the flour?
No, ground oats will make the texture crumbly, not chewy. If you are looking for a gluten-free option, use a blend like Bob’s Red Mill 1:1 or Robin Hood’s gluten-free all-purpose flour blend.
This was a successful recipe. They needed a tad longer to bake for my oven, roughly 30 minutes, they came out beautifully. After cooling for a few hours, they cut perfectly and were soft, chewy with a nice crisp on the edge pieces. Finally found a cookie bar recipe that worked. Thank you!
You’re very welcome and I’m so happy it was to your liking:)

Craving a cookie, not wanting to make a huge mess. Made your recipe, and for the first time my family actually liked a dessert that wasn’t an actual brownie. Thank you!

These are by far, the best bar cookie recipe I’ve ever made!! Chewy, moist and very chocolaty!! I added a cup of chopped walnuts. Glad I was taking them to a potluck cause I might have eaten half the pan!! Thanks for this winner!!
You’re very welcome, Fran, and have a great Easter weekend!
Quick and easy recipe, made for second time. Everyone loved them.
Wow, these truly are amazing! I used a 8 by 13 pan with avocado oil spray. I cooked them for about 28 minutes and the brownies were moist and amazing! This recipe is a keeper, for sure!
Delicious! I browned the butter first for extra flavor – well worth the time it takes because it adds depth of flavor. I changed it to 1 cup mini semi sweet chips and 1 cup white chocolate chips because it’s what i had on hand. So good!!
Hi Lily,
Just made these this afternoon. Such a chewy, delicious bite!😋 The hardest part was waiting for them to cool!😉 My husband can’t stay out of them. This recipe is a keeper! Thank you!
You’re very welcome, Kim! So happy both you and hubby like the cookie bars:)
I would rate it a 4.5. The dough was too thick to evenly spread it. So some parts were well done compared to others. They tasted great. Thanks for the recipe.
Wait. Is 2 cups not 500 grams? one cup is 250 grams.
1 cup of properly measured flour weights 125g, so 2 cups is 250g. The weight of flour is not the same as the volume (ml)
