Chewy Chocolate Chip Cookie Bars (video)
These easy chocolate chip cookie bars are super chewy, loaded with chocolate chips, and only takes 10 minutes to prepare. Just mix everything by hand and bake!

Chocolate chip cookie bars are just a simpler, thicker and chewier version of a chocolate chip cookie. It’s simpler in the fact that you don’t have to drop the batter for individual cookies onto a baking sheet. You just bake the whole thing in one pan and cut into squares afterward.

How to make chocolate chip cookie bars:

- In a medium bowl, toss together the flour, baking soda, and salt. Set aside.
- In a large bowl, whisk together the melted butter and brown sugar until smooth and glossy. Then whisk in the eggs and vanilla extract.
- Stir in the dry ingredients until just combined and fold in the semi-sweet chocolate chips.
- Spoon the batter into a 9×13″ baking pan lined with parchment paper. Spread the batter out evenly in the prepared pan. Bake at 350F for 20-25 minutes.

Yes, they freeze really well. Cool completely and place the bars in a freezer-friendly container or ziplock bag and store in the freezer for up to 3 months. Chewy Chocolate Chip Cookie Bars
Ingredients
- 2 cups (250g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup (170g) unsalted butter, melted
- 1 1/2 cups (300g) brown sugar, lightly packed
- 2 large eggs
- 2 tsp vanilla
- 2 cups (340g) semi-sweet chocolate chips
Instructions
- Preheat oven to 350F. Line and butter a 9x13" baking pan with parchment paper.
- In a medium bowl, toss together the flour, baking soda, and salt. Set aside.2 cups (250g) all-purpose flour, 1 tsp baking soda, 1/2 tsp salt

- Transfer the dough into the prepared baking pan and spread out evenly.
- Bake for about 20-25 minutes or until the edges are lightly browned and a toothpick inserted into the center comes out clean. Let stand for 1-2 hours until relatively cool before cutting into squares.

Made twice in one week…so much easier than baking batches of cookies. I did add an extra ingredient that I put in my chocolate chip cookie recipe and that is vanilla pudding and pie filled mix (about 1/2 package for this recipe). It just adds extra moisture and flavor.
Looks great – one problem no chocolate chips. Have you tried the recipe with anything else at all?
You can use chopped up chocolate candy bars, nuts, or dried fruit if you don’t have chocolate chips.
We loved this recipe. I did cut the sugar to 1 cup, only as we prefer baked goods less sweet, but apart from this change, followed the instructions as written. I think it is important to use brown sugar for the richness of flavour, and also not to overbake. The squares freeze very well. This recipe will be a “go to”. Thanks so much for posting.

I have a question! What would happen if I omitted 1/2 a cup of brown sugar and used 1 egg and 1 egg yolk? I plan on making these tomorrow for my family but i’m just curious! Please let me know 🙂

Yes, you can use white sugar. However, I would add 2 tablespoons of molasses, if you have, to keep the flavor and moisture the same. Enjoy and have a great weekend!

Very yummy. I let them cool completely, but the next day put my piece in the microwave for about 15 seconds. Wonderful, soft and slightly gooey. Will definitely make these again.
Oh my goodness. I made these last night to take to my aunties lunch and couldn’t resist eating a small piece whilst I was cutting them this morning.
Needless to say a small piece turned into a rather large piece and now my mouth is drooling for more.

I just mixed these up and now they are in the oven. You should only be able to smell how good the house smells. Family was upset when I told them the recipe says let cool 1-2 hours! That’s never going to happen, I doubt.:-)

These turned out great and so much faster than congo squares! I baked them in our rv oven and so i had to use a quarter sheet pan with parchment up the sides. Worked great. They still taste amazing even though i dropped them on the floor when my parchment ripped. While I was trying not to cry my wonderful husband scooped them off the floor mostly intact. A funny family memory all thanks to your yummy bars 🙂
