Healthy Invisible Apple Cake is a light, custardy French apple cake made with thinly sliced apples, collagen peptides, and simple pantry ingredients.

Ingredients

Instructions
Preheat oven to 350F and line a 9x5" loaf pan with parchment paper.
Thinly and evenly slice the apples using a mandoline.
5 cups baking apples
In a large bowl, beat the eggs and sugar until light and fluffy. Add the milk, butter, and vanilla. Beat again until combined.

¼ cup sugar,
½ cup milk,
2 Tbsp butter,
1 tsp vanilla extract
Add the flour, collagen, baking powder, cinnamon, and salt. Mix until combined.
½ cup all-purpose flour,
¼ cup collagen peptides,
1 tsp baking powder,
½ tsp ground cinnamon,
¼ tsp salt
Add the apples and toss until all the slices are coated.
Spoon the batter into the prepared loaf pan, making sure to layer the apple slices evenly. Top with almond slices if desired.
2 Tbsp sliced almonds
Bake for 50-60 minutes until golden and a toothpick inserted into the center comes out clean. Let cool complete before slicing and serving.
Notes
Store the cake tightly covered in the refrigerator for up to 4 days.
