Feta Cheese & Blueberry Scones (video)
These sweet and savory scones are tender and buttery with the taste of creamy Feta cheese and fresh blueberry goodness baked in. They are nicely golden and crispy on the outside with an incredibly soft and moist center.

We’re in the full swing of summer here in Ontario. Flowers are in full bloom, the kids are off from school, and the weather has been great!

This easy scone recipe only takes 30 minutes of prep (that’s including chill time) and 20 minutes to bake. It’s all made in one bowl and completely by hand. You simply toss together your dry ingredients, cut in your butter, and add in the blueberries and Feta cheese. Then you stir in your wet ingredients, and knead and pat out the dough. Cut the dough into wedges and chill it in the fridge while your oven heats up. Chilling the dough allows the gluten in the flour to relax, which makes the scones more tender and produces a higher rise. It also solidifies the fat which makes the scones flakier.
These Feta cheese and blueberry scones are excellent served for breakfast, brunch or as a snack. They are soft and fluffy on the inside, golden on the outside and have crispy crust. The taste is lightly sweet and salty with a rich creamy cheese flavor and there are bursts of fresh blueberries throughout the scone.

Description
These sweet and savory scones are tender and buttery with the taste of creamy Feta cheese and fresh blueberry goodness baked in.
Ingredients
- 2 cups (250g) all-purpose flour, plus more for work surface and kneading
- 3 tbsp (38g) granulated sugar
- 1 tbsp (15ml) baking powder
- 1 tsp (5ml) salt
- 1/2 cup (114g) unsalted butter, cubed
- 1 cup (148g) blueberries
- 1 cup (135g) Tre Stelle Feta Crumbled
- 2/3 cup (167ml) buttermilk, plus more for brushing on top of scones
- 1 large egg
Instructions
- In a large bowl, toss together the flour, sugar, baking powder and salt.
- Cut in the butter with a pastry cutter or fork until it resembles coarse meal. Stir in the blueberries and Feta cheese. Set aside.
- In a measuring cup, whisk together the buttermilk and egg.
- Pour the wet ingredients over the dry mixture and gently stir with a rubber spatula until all is moistened.
- Scrape the dough onto a generously floured work surface. With floured hands, turn to coat all surfaces with flour. Gently knead 3-4 times to work the dough into a ball. Then pat out into an 8″ circle.
- Cut into 8 wedges and place 2″ apart onto a parchment paper lined baking sheet. Chill uncovered in the fridge for 20 minutes while you preheat your oven to 400F.
- Brush the tops of the scones with more buttermilk and bake for about 20 minutes or until golden brown.
Notes
The scones are best enjoyed the day of.
Leftovers can be stored wrapped up in the fridge for up to 3 days.
To re-heat, place on a baking sheet, lightly tent with foil, and warm for 10 minutes at 350F.

Thank you, Jannet! The sugar is there to balance the tartness of the blueberries and the saltiness of the cheese. Omitting it won’t affect the texture. You could also just reduce the amount if you wish.

Can I replace the feta with regular cheese? Also can I replace the blueberries with cranberries?

You can substitute the feta with something like a shredded cheddar or mozzarella cheese (if that’s what you mean by “regular cheese”). I would add a little more sugar if you are planning on using fresh cranberries. I hope that helps. Feel free to email me back if you have any further questions:)
What if I don’t have buttermilk? I read online about adding lemon juice or vinegar to milk. What is your suggestion for buttermilk replacement? What is the taste/consistency difference if you use regular milk instead of buttermilk? Thank you so much!
Yes, you can make your own buttermilk by adding lemon juice or white vinegar to regular milk. The recipe does work with regular milk, but buttermilk gives the best texture (more tender).I hope that helps and feel free to email me back if you have any other questions:)

I think it will work. Perhaps reduce the cheese to 1/2 cup because goat cheese has a much stronger taste. Also, you might need to reduce the amount of buttermilk because there is less cheese and goat cheese is not as dry as crumbled feta. I just started making scones a month ago (I know, I am stupid) and I am all for scones now. Germans need scones! This sounds great, I would have never thought to use feta cheese. Wow, I think I want to try this soon and will definitely report back.
