How to make Nutella banana muffins:

  1. In a large bowl, whisk together the mashed ripe bananas, granulated sugar, vegetable oil, eggs, yogurt, and vanilla extract.
  2. In another bowl, toss together the flour, baking soda, and salt. Add to the wet ingredients and mix until just combined.
  3. Divide half of the muffin batter into a paper-lined or greased 12-cup muffin pan. Add a teaspoon of Nutella to each muffin.
  4. Repeat and swirl the Nutella on top of the batter. Bake at 350F for 25 minutes.

Expert tips:

  • Preparing the pan – You can either use paper liners or generously grease the muffin pan with butter or non-stick cooking spray. I find it’s best to grease the entire pan including the rim with non-stick cooking spray.
  • Preparing the Nutella – Warming up the Nutella in a microwave-safe bowl for 15-20 seconds makes it less thick and much easier to add to the batter.

Variations:

You can use any kind of chocolate hazelnut spread or nut spread with this recipe. You can also substitute the Nutella with any kind of jam or fruit preserve. A Nutella banana muffin cut in half on a cooling rack.

Ingredients

  • 1 cup (240g) overripe mashed bananas (about 2 large)
  • 1 cup (200g) granulated sugar
  • 1/2 cup (125ml) vegetable oil
  • 2 large eggs
  • 1/4 cup (60g) sour cream or plain yogurt
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5ml) baking soda
  • 1/2 tsp (2.5ml) salt
  • 1/2 cup Nutella

Instructions

  1. Preheat oven to 350F. Line a 12-cup muffin pan with paper liners or generously grease (incl. the rim) with butter or nonstick spray (preferred method).
  2. In a large bowl, whisk together the mashed bananas, granulated sugar, vegetable oil, eggs, sour cream, and vanilla extract.
  3. In another bowl, toss together the flour, baking soda, and salt. Add to the wet ingredients and mix until just combined.
  4. Divide half of the batter into the prepared muffin pan. Place the Nutella in a small microwave-safe bowl and warm it up in the microwave for 15-20 seconds. Add a teaspoon of it to each muffin.
  5. Repeat and swirl the Nutella using a toothpick on top of the batter.
  6. Bake for 23-25 minutes or until golden brown on top.

Notes

Leftovers can be stored in an airtight container at room temperature for up to 3 days or in the fridge for up to 5 days.
