These Lobster Biscuits were inspired by my recent culinary adventure to PEI – a place where food isn’t just eaten, it’s celebrated.

A Food Lover’s Dream on the Island

The moment I set foot in PEI, I understood why it’s called Canada’s Food Island. There’s something different in the air – a mix of salt, sea, and pure hospitality.

Our very first night set the tone at Sea Rocket Oysters House, where we were greeted with an incredible oyster tower, glistening like jewels from the sea. From there, the night unfolded with a symphony of flavors – tender steak, fresh fish tacos, buttery seafood – each bite paired perfectly thanks to Chef Ilona’s expert wine pairings 🍷💫.

Day two took us deeper into PEI’s food culture, from land to sea and everything in between. We started the morning with a fascinating behind-the-scenes tour of the Atlantic Beef Plant 🥩, learning about the care and craftsmanship that goes into every cut of Atlantic Beef. Then, it was time to trade our hairnets for life jackets as we set off on a scenic boat ride to explore Prince Edward Aqua Farms🛥️🌊 – a true highlight of the day. Watching the mussels being pulled from the water, glistening in the sunlight, gave me a whole new appreciation for PEI’s world-class seafood.

Afterward, we enjoyed a cozy lunch at the PEI Preserve Company 🍴💛, where the air was filled with the scent of sugar and fruit, and every bite tasted like home.

Then we toured Taters, Tractors & Tales to learn about the history of potato farming. Fun fact: 10% of PEI potatoes are used for seed, 30% for the table, and 60% for processing… that’s a whopping 2.5 billion pounds every year! 🤯

From there, it was back to the water for an oyster boat ride and tasting by Raspberry Point Oysters 🦪. With the ocean breeze in our hair and a freshly shucked oyster in hand, it was one of those moments where time slows down and everything tastes better.

Our day ended with an unforgettable dinner at Sim’s Steakhouse & Oyster Bar ✨🥂. We started with raw oysters, steak tartare, and seafood bruschetta 🦪🥩🍴, followed by steak three ways – ribeye, chateaubriand, and more – served family-style with sides like lobster mac & cheese, crispy Brussels sprouts, and chili-crisp broccolini. The evening ended sweetly with sticky date pudding topped with caramel ice cream and warm toffee sauce 🍮.

Taste the Island at Home

Every bite of these Lobster Biscuits takes me back to that red-sand island – where every meal feels like a celebration, and every ingredient has a story.

So if you’ve ever thought about visiting Prince Edward Island, take this as your sign. Go for the seafood, stay for the scenery, and leave with your heart (and stomach) completely full.

Ingredients you’ll need:

  • Cooked lobster: Adds a sweet, delicate seafood flavor and a touch of East Coast indulgence.
  • All-purpose flour: Forms the structure while keeping the biscuits light and tender.
  • Butter: Creates flaky layers and a rich, buttery flavor.
  • Pepper and garlic powder: Add gentle warmth and a savory depth that enhance the lobster.
  • Salt and sugar: Balance flavors and help the biscuits bake up golden and perfectly seasoned.
  • Chives: Bring a fresh, mild onion note and a pop of color.
  • Buttermilk: Adds moisture and tang while making the biscuits soft and fluffy.
  • Cheddar cheese: Lends a creamy, savory sharpness that complements the sweet lobster.

How to make lobster biscuits:

  1. In a large mixing bowl, toss together the flour, baking powder, sugar, black pepper, and salt.
  2. Work in the butter using a pastry cutter or two forks until the mixture resembles coarse meal with some pea-size pieces of butter remaining.
  3. Mix in the lobster, cheese, and chives.
  4. Add in the buttermilk and stir until the dough comes together.
  5. Pat out the dough into a 1″ thick rectangle and cut into thirds.
  6. Stack together and repeat one more time. Cut the dough into 8 equal pieces.
  7. Transfer each piece to a lined baking sheet and chill in the fridge for 20 minutes while preheating the oven to 400F.
  8. Brush the tops with more buttermilk and bake for 25 minutes or until golden.

  • Use fresh lobster if possible: Its natural sweetness and tenderness make these biscuits extra special.
  • Keep everything cold: Cold butter and buttermilk help create those perfectly flaky layers.
  • Don’t overmix the dough: Mix just until combined to keep the biscuits light and soft.

Storing & freezing instructions:

  • Refrigerate: Place cooled biscuits in an airtight container and refrigerate for up to 3 days. Reheat in a 350°F (175°C) oven for about 5–7 minutes until warm and flaky again.
  • Freeze: Once baked and completely cooled, transfer the biscuits to a freezer-safe bag or airtight container and freeze for up to 3 months. Reheat straight from frozen at 350°F (175°C) for 10–12 minutes until heated through.

Lobster Biscuits

Ingredients

  • 2 ¾ cups all-purpose flour, plus more for dusting
  • 1 Tbsp baking powder
  • 2 tsp granulated sugar
  • 2 tsp garlic powder
  • 1 tsp ground black pepper
  • ½ tsp salt
  • ½ cup unsalted butter, cold and cubed
  • 1 cup cooked lobster meat
  • 1 cup shredded cheddar cheese
  • ¼ cup chives, finely chopped
  • 1 cup cold buttermilk, plus more for brushing

Instructions
 

  • In a large mixing bowl, toss together the flour, baking powder, sugar, black pepper, and salt.
    2 ¾ cups all-purpose flour, 1 Tbsp baking powder, 2 tsp granulated sugar, 2 tsp garlic powder, 1 tsp ground black pepper, ½ tsp salt
