Ingredients you’ll need:

  • All-purpose flour: Provides structure and gives the fritters their soft, bread-like texture.
  • Protein powder: Adds extra protein while replacing a small portion of the flour. You can simply use more all-purpose flour if you prefer to skip the protein powder.
  • Granulated sugar: Adds just enough sweetness to the fritters without making them overly sweet.
  • Baking powder: Provides the lift that makes the fritters soft and fluffy without using yeast.
  • Greek yogurt: Keeps the fritters moist and tender while adding protein and replacing the need for a large amount of butter or oil.
  • Lemon zest or cinnamon: Lemon zest adds a fresh, bright flavor that complements the blueberries, while cinnamon gives the fritters a warmer, more traditional flavor.
  • Vanilla extract: Adds warmth and sweetness to the fritter batter and rounds out the blueberry flavor.
  • Blueberries: Add natural sweetness and juicy bursts of blueberry flavor throughout each fritter.
  • Powdered sugar: Forms the base of the simple glaze.
  • Milk: Thins the powdered sugar into a smooth glaze that can easily be drizzled over the fritters.

How to make healthy baked blueberry fritters:

(The full written and printable recipe is further below.)

Step #1) In a large bowl, toss together the flour, protein powder, sugar, and baking powder.

Step #2) Stir in the Greek yogurt until almost combined, then fold in the blueberries until just combined.

Step #3) Spoon the batter into 6 equal portions 2″ apart on a silicone mat or parchment paper-lined baking sheet.

Step #4) Bake at 375F for 20 minutes. Once completely cooled, drizzle with glaze.

🌟 Expert tips:

  • Expect a thick batter. The batter should be thick enough to scoop and hold its shape on the baking sheet. Protein powders vary in how much moisture they absorb, so add 1–2 tablespoons of milk if your batter seems excessively dry.
  • Be gentle with the blueberries. Fold them in at the very end so they don’t break apart and turn the entire batter purple.
  • Fresh blueberries work best. They’re easier to fold into the thick batter and tend to bleed less than frozen berries.
  • Let the fritters cool slightly before glazing. If they’re piping hot, the glaze will melt right off. Slightly warm fritters will give you a thinner glaze, while completely cooled fritters will give you a thicker white finish.

Storing & freezing instructions:

Store leftover blueberry fritters in an airtight container in the refrigerator for up to 3–4 days. Enjoy them cold, at room temperature, or gently reheated before serving.

For longer storage, freeze the fritters without the glaze in an airtight, freezer-safe container for up to 2 months. Thaw at room temperature or gently reheat them in the oven or toaster oven, then glaze before serving.

Recipe FAQs:

Are baked blueberry fritters healthier than fried fritters?

Yes, baking eliminates the need to deep-fry the fritters in oil. This version also uses Greek yogurt for moisture and includes the option of adding protein powder, making it a lighter alternative to a traditional fried fritter.

Can I make these without protein powder?

Yes. Simply replace the 1/4 cup of protein powder with an additional 1/4 cup of all-purpose flour.

Can I use frozen blueberries?

Yes. Add the blueberries directly from the freezer without thawing them first. Gently fold them into the batter just before baking to minimize bleeding. Bake for a few extra minutes.

How do I know when the fritters are done?

The fritters should be lightly golden around the edges and set in the center. The tops should also spring back slightly when gently pressed.
