Ingredients

  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • zest of 1 lemon
  • 1/2 cup plain whole milk yogurt (Greek yogurt works too)
  • 1/2 cup vegetable or canola oil (or any neutral oil)
  • 1/2 tsp vanilla extract
  • 1 & 1/2 cups (190g) all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350F. Grease an 8×4″ loaf pan. Line with parchment paper with overhang sides for easy removal. Set aside.
  2. In a large bowl, whisk together the sugar, eggs, and lemon zest until well combined. Then whisk in the yogurt, oil, and vanilla until smooth.
  3. Sift in the flour, baking powder, and salt and stir until just combined. Pour the batter into the prepared pan.
  4. Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean. Use the parchment paper to remove the loaf from the pan and place on a cooling rack to cool completely.

Leftovers can be stored in an airtight container at room temperature for up to 3 days.
