Last month I had the pleasure of touring Martin’s Family Fruit Farm packing facility and learning about how apples are stored and packaged to stay fresh and be distributed to grocery stores.

I used to think that apples were picked from the farm and shipped directly to the grocery stores. Then I heard that apples were stored for months before they made it to the groceries stores which made me think that the apples that I bought weren’t fresh.

However, that’s not the case at all. There’s a lot of technology and a labour of love that goes into keeping apples fresh and at their best for the end consumer.

Ontario apples are picked at their peak and shipped to be sold immediately or to a commercial storage facility. At the commercial facility, the apples are stored in a controlled atmosphere environment where the temperature is reduced to 1 degree Celsius and the oxygen level is reduced to 2-3 percent. This stops the ripening process, thus putting the apples to sleep, so they remain just as fresh and delicious as the day they were picked.

Once they are ready to be delivered to your local supermarket, they are graded and only the best are selected. They are washed and waxed with an edible wax. Apples have a natural wax coating to help reduce moisture loss and maintain firmness. The food-grade wax is added to augment the fruit’s natural wax coating and help increase shelf-life. It’s all about keeping the apples at their best so they can make their way to your kitchen table as fresh as possible. Then they are packaged as required and delivered to your grocery store for you and your family to enjoy. This recipe uses whole wheat flour and lots of hearty rolled oats. There are only 4 tablespoons of butter in the cookies and they are mostly sweetened with maple syrup. The filling is simply peanut butter with some powdered sugar and a splash of milk. There is no creaming the butter and sugar together with a mixer and there is no chilling required. You just mix and bake.

Apple Oatmeal Whoopie Pies with Peanut Butter Frosting

These whoopie pies are made with a creamy, sweet and salty peanut butter frosting sandwiched between two soft and chewy apple oatmeal cookies.

Ingredients

Cookies

  • 1 & 1/2 cups (165g) whole wheat pastry flour
  • 2 cups (180g) quick oats
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 4 Tbsp (60ml) melted butter
  • 1/2 cup (100g) lightly packed brown sugar
  • 2 large eggs
  • 1/2 cup (125ml) maple syrup, (or honey)
  • 2 tsp vanilla extract
  • 1 cup apples, diced small

Frosting

  • 1/2 cup (135g) smooth peanut butter
  • 1 cup (125g) powdered sugar
  • 2-4 Tbsp milk or cream

Instructions
 

  • Preheat oven to 325F. Line 2 baking sheets with parchment paper or silicone baking mat.
  • In a large bowl, toss together the quick oats, flour, baking soda and cinnamon. Set aside.

  • In a medium bowl, whisk together the melted butter, brown sugar and eggs.
    4 Tbsp (60ml) melted butter, 1/2 cup (100g) lightly packed brown sugar, 2 large eggs
  • Whisk in the maple syrup and vanilla.
    1/2 cup (125ml) maple syrup, 2 tsp vanilla extract
  • Add the wet into the dry ingredients and mix together until just combined. Fold in the diced apples.
    1 cup apples
  • Using a medium cookie scoop or tablespoons, drop rounded cookie batter about 2″ apart onto prepared baking sheet.
  • Bake for 10-12 minutes or until the edges are golden brown. Let cookies cool completely before filling.

To make the filling:

  • Using an electric mixer, combine the peanut butter and powdered sugar. Add the milk or cream, 1 tablespoon at a time until you have a spreadable consistency.
    1/2 cup (135g) smooth peanut butter, 1 cup (125g) powdered sugar, 2-4 Tbsp milk or cream

Notes

The cookies are best enjoyed the day of. Due to the natural juices from the apples, the cookies tend to get moist the day after.
