Step #2) Line a 9″ pie plate with a single pie crust. Crimp the edges as desired. Set aside.

Step #3) Add the cooked sweet potatoes, cottage cheese, eggs, maple syrup, milk, cinnamon, and vanilla to a blender.

Step #4) Transfer the sweet potato mixture into the pie plate. Bake at 350F for 45 minutes or until the crust is golden and the filling is set.
