This Healthy Sweet Potato Pie is creamy, lightly sweetened, and full of cozy fall flavors. It’s made with simple, wholesome ingredients like sweet potatoes, eggs, and maple syrup - all baked in a buttery pie crust. It’s the perfect lighter twist on a classic Southern dessert!
Bake the sweet potatoes in the oven or air-fryer at 400F for 20-30 minutes until tender. Let cool and remove the skin. You can cook the sweet potatoes up to 2 days in advance.
Preheat the oven to 375F. Line a 9" pie plate with a single pie crust. Crimp the edges as desired and set aside.

Add the cooked sweet potatoes, cottage cheese, eggs, maple syrup, milk, cinnamon, and vanilla to a blender. Blend until smooth and combined.
2 cups cooked sweet potatoes, 1 tsp ground cinnamon, 1 tsp vanilla extract, 2 large eggs, 1/2 cup maple syrup, 1 cup cottage cheese, 1/4 cup milk of choice
Transfer the sweet potato mixture into the pie plate. Bake for 45 minutes or until the crust is golden and the filling is set.
