What is a chocolate truffle?

A chocolate truffle is a type of chocolate confectionery. They are typically made with cream and solid chocolate melted together to make a ganache, then formed into small balls and coated in cocoa powder. Variations include different flavorings added to the chocolate ganache and different coatings like sprinkles, nuts, and candy. A small plate of homemade chocolate truffles covered in sprinkles

Why this recipe is so great:

  • No-fuss method – Simply melt the chocolate and cream together in the microwave at 50% power in short bursts. There is no double-boiler required and no need to stand over the stove.
  • Just 4 ingredients – All you need is good-quality chocolate, whipping cream, pure vanilla extract, and some fun sprinkles.
  • Tastes better than expensive store-bought truffles – These truffles are incredibly smooth, indulgent, and melt-in-your-mouth good. They honestly taste like little bite-size spheres of chocolate heaven.

How to make chocolate truffles:

(the ingredient amounts are listed in the printable recipe card further below)

  1. Finely chop the chocolate and transfer it to a microwave-safe bowl. Pour the cream over the top. Melt in the microwave at 50% power for 30 seconds at a time, stirring in between until completely melted and smooth.
  2. Stir in the vanilla extract. Cover and chill in the fridge for 2 hours.
  3. Scoop the ganache using a small truffle scoop, melon scoop, or teaspoon. Place on wax paper and put back in the fridge uncovered for 30 minutes. This will dry out the outer surface and make it much easier and less messy to roll.
  4. Quickly roll the ganache in the palm of your hands into round balls and coat in sprinkles. Let stand for 30 minutes and serve.

Variations:

  • Flavor – Instead of vanilla, try pure peppermint extract for a chocolate-mint flavor or pure orange extract for a chocolate-orange version like Terry’s Chocolate Orange.
  • Coating – You can coat them in unsweetened cocoa powder or dip them in melted chocolate for more traditional truffles. Finely shredded coconut, candy bits like chocolate flakes, or finely chopped nuts work well too.
