Best Chocolate Chip Cookies
These chocolate chip cookies are crispy around the edges, soft and chewy in the middle and loaded with chocolate chips.
Welcome to my first post. It is the perfect chocolate chip cookie recipe. The chocolate chip cookie was the start of my journey in the food blog world. I was so determined to find the best recipe out there, that I must have looked over a hundred different ones online. I narrowed it down to four that seemed interesting, gave them a try, and took what I learned and liked from each. Then I came up with my own version, tweaked it multiple times to get it just right, and here it is (drum roll please), the best chocolate chip cookie recipe EVER! This bakery style cookie is crispy around the edges, soft and chewy in the middle, loaded with chocolate chips, and the best part is, it’s even chewier the next day!
The original version of this recipe was by Jacques Torres, and was made famous by The New York Times. The secret to this awesome recipe lies in combinating bread flour and cake flour, instead of using all-purpose flour. The bread flour gives the cookies their chewy texture and the cake flour makes the cookies soft. Increasing the bread flour versus cake flour makes this recipe even chewier than the original, brilliant idea by Buttercream Bakehouse. If you don’t normally use cake flour and bread flour on a regular basis, just buy what you need for this recipe from the Bulk Barn. This recipe also requires the dough to be chilled for 24hrs, but trust me, it’s worth the wait. The chilling allows the ingredients to marry and when baking the chilled cookie dough, it will cook faster on the outside and slower in the middle. Thus resulting in a crispy outer layer, and chewy centre.

Description
These chocolate chip cookies are crispy around the edges, soft and chewy in the middle and loaded with chocolate chips.
Ingredients
- 2 cups bread flour
- 1 1/2 cups cake flour
- 1 1/4 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 1/4 cups unsalted butter room temperature
- 1 cup dark brown sugar, loosely packed
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla
- 2 cups semi sweet chocolate chips
Instructions
- Mix bread flour, cake flour, baking powder, baking soda and salt with a hand whisk in a bowl, set aside.
- Using a stand mixer with the paddle attachment, cream butter, brown sugar and white sugar until light and fluffy.
- Add eggs, one at a time, mixing well after each addition, then add vanilla.
- Add dry ingredients until just combined.
- Stir in chocolate chips.
- Line a large cookie sheet with wax or parchment paper, then drop rounded cookie dough using a medium cookie scoop or a heaping tablespoon. Add a few extra chocolate chips on top if desired. (You can just refrigerate the dough as is and form the rounded dough when ready to bake, but forming the dough before chilling will save you a lot of muscle work.)
- Cover with plastic wrap and refrigerate for 24-36hrs.
- When ready to bake, preheat oven to 350°F. Line baking sheet with parchment paper. Place 12 rounded cookie doughs 2 inches apart.
- Bake for 10 minutes or just until edges are golden brown.
- Let the cookies continue to bake on cookie sheet for 5 minutes before transferring to cooling rack and enjoy!

Yes, you can freeze the raw dough or the baked cookie.
can i use whole wheat bread flour, I accidentally bought it and have no use of it so I want to replace it for recipes that use bread flour.
These are the best chocolate chip cookies! With being 60 years old I have tried many chocolate chip cookie recipes. This is the best by far. My grandchildren love them too. We also put M&M’s in them, and they are just as good. I have also froze the remaining dough, and made more at a later date, you would never know.

I baked these cookies earlier. Result was not amazing because my chocolate chips didn’t expand and became crispy. I suspected it’s because my oven was too hot and baking time was too much. Nevertheless, it tastes really good especially with hot tea or milk. I will try baking it again until I perfect it. Thanks. I shared it in your Instagram. REgards.

OMG these cookies are the bomb! I finally found my perfect Chocolate Chip Cookie recipe. I almost went in to a panic last night because I gave my printed out copy to someone and apparently I didn’t save it on my computer. Thankfully I had snapped a fuzzy picture of it before I gave it away and that was just enough to help me find it here again. So happy now and it’s saved and I have about 10 copies printed out, just in case! I often give the cookies away and everyone says the same thing, these cookies are awesome! Then they’re mad at me because they ate them all because they are that good lol. They really are the best when using bread flour and cake flour. In a pinch you can use all purpose flour instead of bread flour, and if you don’t have cake flour you can substitute 1 cup flour, less 2 tablespoons, plus two tablespoons of corn starch. Bread flour has more protein which gives a more chewy elastic texture, while cake flour gives a more soft and tender texture. Using both of these flours makes the cookies both soft and chewy at the same time. I hope that helps and feel free to email me back with any further questions. Enjoy:)
What if I have only all purpose flour and my son wants to bake right now??

Well, if your son wants to bake right now and all you have is all-purpose flour then go ahead and make your son happy. I have recently tried this recipe with AP flour and it works fine. Please note that there is chilling required for this recipe. Can use vegetable oil instead of butter?

I don’t recommend using oil instead of butter because the oil won’t solidify like butter when you chill the cookie dough and the batter will spread too much when baked. I hope that helps and feel free to email me back if you have any further questions:)

This is my go-to recipe! My boyfriend and his brother always ask when I am making more cookies. 🙂 I left a tub of dough at their house so that they could bake some when they are craving. He sent me a picture of some very flat cookies he baked, asking me what he did wrong. He said he had squished the cookies down with a spatula half way through baking! “But cookies are flat! You don’t flatten them?,” he said. He thought that it was necessary to allow them to “bake evenly.” 🙂 Amazing recipe, thank you SO much!!
