Cake
- 3 cups (375g) all-purpose flour
- 1 tbsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup (200g) granulated sugar
- 1 cup (200g) lightly packed brown sugar
- 1/2 cup (125ml) vegetable or canola oil
- 1/2 cup sour cream or plain yogurt
- 4 large eggs
- 1/4 cup milk
- 2 tsp vanilla extract
- 3 cups apples peeled, cored, and diced
Topping
- 1/4 cup (50g) granulated sugar
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350F and grease a 9×13 baking dish.
- In a medium bowl, toss together the flour, baking powder, cinnamon, and salt. Set aside.
- In a large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, sour cream or yogurt, eggs, milk, and vanilla.
- Stir in the dry ingredients until just combined. Then fold in the apples.
- Transfer the batter to the prepared baking dish. In a small bowl, mix the sugar and cinnamon together and sprinkle evenly on top of the cake.
- Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.

Leftovers can be tightly covered with plastic wrap or transferred to an airtight container and stored at room temperature for up to 3 days.
Simple straightforward recipe. I did freeze it afterwards and the apples did not turn to mush. In fact freezing it created a denser, moister cake.
I halved the recipe because we are a small family. Used a 9×12″ dish for half recipe, though next time I will use a 9×9″. I thought it tasted amazing and so easy to make! Thank you again for another wonderful recipe.
