Ingredients

Cake

  • 3 cups (375g) all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) lightly packed brown sugar
  • 1/2 cup (125ml) vegetable or canola oil
  • 1/2 cup sour cream or plain yogurt
  • 4 large eggs
  • 1/4 cup milk 
  • 2 tsp vanilla extract
  • 3 cups apples peeled, cored, and diced

Topping

  • 1/4 cup (50g) granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350F and grease a 9×13 baking dish.
  2. In a medium bowl, toss together the flour, baking powder, cinnamon, and salt. Set aside.
  3. In a large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, sour cream or yogurt, eggs, milk, and vanilla.
  4. Stir in the dry ingredients until just combined. Then fold in the apples.
  5. Transfer the batter to the prepared baking dish. In a small bowl, mix the sugar and cinnamon together and sprinkle evenly on top of the cake.
