Ingredients

(200g) whole wheat pastry flour

(80ml) extra-virgin olive oil or avocado oil

(120ml) maple syrup or honey

large eggs

(300g) overripe mashed bananas
(about 2 large bananas)

teaspoon
vanilla extract
optional 1/2 cup mix-ins like chopped walnuts or pecans
chocolate chips, raisins, etc.
Instructions
Preheat oven to 325F and grease a 9x5 loaf pan.
In a large bowl, toss together the whole wheat flour, baking soda, cinnamon and salt. Set aside.
1 & 3/4 cups (200g) whole wheat pastry flour,
1 tsp baking soda,
1 tsp ground cinnamon,
1/2 tsp salt
In a medium bowl, whisk together the olive oil, maple syrup and eggs.
1/3 cup (80ml) extra-virgin olive oil or avocado oil,
1/2 cup (120ml) maple syrup or honey,
2 large eggs
Whisk in the mashed bananas and vanilla.
1 cup (300g) overripe mashed bananas,
1 teaspoon vanilla extract
Add the wet ingredients to the dry ingredients. Stir until just combined. Fold in mix-ins. Pour batter into prepared baking pan.
Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean. Do not overbake. Let cool for 30 minutes before slicing.
Notes
Leftovers can be stored in an airtight container or tightly wrapped in plastic wrap at room temperature for up to 3 days.
