Description

This is a moist flavorful banana bread that is studded with delicious blueberries, and topped with a crunchy sweet cinnamon streusel.


Ingredients

Streusel

  • 1/4 cup (30g) all-purpose flour
  • 1/4 cup (50g) sugar
  • 1/2 tsp cinnamon
  • 2 tbsp (30ml) melted unsalted butter

Bread

  • 1/2 cup (114g) melted unsalted butter
  • 1 cup (240g) mashed bananas
  • 1/4 cup (60ml) milk
  • 1 & 3/4 (220g) cups all-purpose flour
  • 1 cup (200g) sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup (150g) blueberries

Instructions

  1. Preheat oven to 325F. Butter and line a 9×5″ baking pan with parchment paper.
  2. In a small bowl, toss together the first 3 ingredients for the streusel. Add in melted butter and stir until mixture looks like wet sand.
  3. In a medium bowl, whisk together the melted butter, bananas and milk. Set aside.
  4. In a large bowl, whisk together the flour, sugar, baking soda, salt and cinnamon together. Toss in the blueberries to coat.
  5. Add the wet ingredient to the dry and mix until just combined.
  6. Pour into prepared baking pan. Sprinkle with streusel on top and press down lightly.
  7. Bake for about 1 hour or until a toothpick inserted into the center comes out clean.
