In a large mixing bowl, beat the eggs and sugar until well combined.
3 large eggs, 3/4 cup (150g) granulated sugar
Slowly add in the olive oil, mixing as you go.
1/2 cup (125ml) olive oil
Mix in the milk, then the vanilla and lemon zest. With the mixer on low, slowly add in the dry ingredients, mixing until just combined. Pour the batter into the prepared pan.
