Ingredients

chopped small (about 1 cup)
Instructions
Preheat oven to 350F. Spray a 12-cup muffin pan very well with non-stick cooking spray. Set aside.
In a large bowl, whisk together the milk, eggs, applesauce, and maple syrup.
1 & 1/4 cup milk,
2 large eggs,
1/2 cup unsweetened applesauce or mashed banana,
1/2 cup maple syrup or honey
Stir in the rolled oats, baking powder, cinnamon and salt.
3 cups (270g) rolled old-fashioned oats,
1 tsp baking powder,
2 tsp ground cinnamon,
1/4 tsp salt
Fold in the chopped apples.
1 medium apple
Spoon and divide the mixture evenly into each muffin cup.
Bake for 25-30 minutes or until the center is set and edges are golden brown.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 5 days. Reheat in the microwave for 20-30 seconds if desired.
