Fruit Streusel Coffee Cake
A tasty yogurt coffee cake, topped with sweet strawberry pie filling and a crunchy cinnamon brown sugar streusel.
I found this recipe attached to my new Wilton 9″ square baking pan. I had to purchase a new pan because I had scratched the heck out of my old one by using the wrong scrub sponge. It was one of those regretful, silly mistakes. But hey, something positive came from my stupidity, this awesome recipe.
The coffee cake is a lovely, yellow, rich buttery cake with a hint of almond flavor. The pie filling adds a perfect balance of sweetness and fruitiness to the dessert, but the best part is the cinnamon brown sugar streusel on top. This coffee cake is made up of layers upon layers of different and wonderful flavors and textures. You have the soft, spongy cake layer on the bottom, followed by a sweet fruit jam in between, and finished off with a crunchy, almond oat streusel topping.
To make my own stamp on the original recipe, I made a few modifications. To save some calories, I decided to substitute half a cup of butter with half a cup of Greek yogurt because I thought 4 eggs and one cup of butter was a little too rich. I also reduced the amount of sugar because I knew pie filling would be plenty sweet. I used sliced almonds instead of pecans in the streusel because I thought the shape and texture would match the old fashioned oats better. And finally, the original recipe is a cherry streusel coffee cake, but I’m not a fan of cherry pie filling so I used strawberry instead.
Please note this recipe is for a 9×9 inch square pan and my cake rose right to the top while it was baking, so if you’re using an 8×8 inch pan, remove about 1 cup of batter and 1/2 a cup of pie filling so it doesn’t overflow.

Ingredients
Ingredients for streusel topping:
- 2/3 cup sliced almonds
- 2/3 cup old fashioned oats
- 3/4 tsp cinnamon
- 3 tbsp packed brown sugar
- 3 tbsp butter, softened
Ingredients for cake:
- 1 cup sugar
- 1/2 cup butter, softened
- 1/2 cup greek yogurt
- 4 large eggs
- 1 tsp vanilla
- 1 tsp almond extract
- 2 & 1/2 cups all-purpose flour
- 1 & 1/2 tsp baking powder
- 1/2 tsp salt
- 1 can strawberry pie filling (or any kind you prefer)
Instructions
- Preheat oven to 325F and prepare a 9 inch square pan with butter or non-stick cooking spray.
- In a small bowl, combine all streusel ingredients until crumbly.
- In a large bowl and using an electric mixer, beat the sugar and butter together until light and fluffy. Add the greek yogurt, mix and add the eggs, one at a time, then vanilla and almond extracts, mixing in between.
- In a medium bowl, toss together the flour, baking powder and salt, then add to butter mixture. Mix until just moistened. Spread the batter onto the prepared baking pan. Evenly top with the pie filling then sprinkle with streusel.
- Bake for about 50 minutes or until cake tester comes out clean.
