Description
These baked apple oatmeal cups are packed with wholesome ingredients like apples, rolled oats, milk, and eggs. Not only are these oatmeal cups tasty, but they also contain no refined sugar and are a great source of fiber.
Ingredients
- 1 & 1/4 cup milk (dairy or plant-based)
- 2 large eggs
- 1/2 cup unsweetened applesauce or mashed banana
- 1/2 cup maple syrup or honey
- 3 cups rolled old-fashioned oats
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 1/4 tsp salt
- 1 medium apple, chopped small (about 1 cup)
Instructions
- Preheat oven to 350F. Spray a 12-cup muffin pan very well with non-stick cooking spray. Set aside.
- In a large bowl, whisk together the milk, eggs, applesauce, and maple syrup.
- Stir in the rolled oats, baking powder, salt, and cinnamon. Fold in the chopped apples.
- Spoon and divide the mixture evenly into each muffin cup.
- Bake for 25-30 minutes or until the center is set and edges are golden brown.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 5 days. Reheat in the microwave for 20-30 seconds if desired.
