These cookies are packed with the great taste of peanut butter. They are soft and slightly chewy. They are super easy to make and even better to eat!
- 1 cup (260g) smooth peanut Butter
- 1/2 cup (100g) sugar
- 1 egg
- Preheat oven to 325F.
- In a medium bowl, mix all the ingredients together with a rubber spatula or wooden spoon.
- Drop rounded cookie mounds onto a parchment paper lined baking sheet. If your batter is thick, criss-cross with a fork to flatten slightly. My batter was soft because my house was quite warm, so I didn’t need to flatten the cookies.
- Bake for 15-17 minutes or until the edges are lightly browned (do not overbake) Cool on baking sheet for 10 minutes before transferring onto a cooling rack.
