Ingredients

  • 2 cups (250g) all-purpose flour
  • 2 tsp (5g) pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/2 tsp nutmeg)
  • 1 tsp (5g) baking soda
  • 1/2 tsp (2.5g) salt
  • 1&1/2 cup (375g) canned pumpkin puree
  • 1/2 cup (125ml) vegetable oil
  • 1&1/2 cup (300g) granulated sugar
  • 2 large eggs

Instructions

  1. Preheat oven to 350F and grease a 9×5″ loaf pan.
  2. In a large bowl, toss together the flour, pumpkin pie spice, baking soda and salt. Set aside.
  3. In a medium bowl, whisk together the remaining ingredients.
  4. Pour the wet ingredients into the dry and stir until just combined.
  5. Spoon into prepared baking pan and bake for 45-60 minutes or until a toothpick inserted into the center comes out with just a few moist crumbs and the top springs back when lightly touched.
